A twist on the classic salad with the health benefits of coconut.
- 4 large apples
- juice of 1 lemon
- 4 stalks celery, chopped
- 1 cup crispy walnuts, chopped
- 1 Tbsp fresh cilantro
- ½ cup mayonnaise
- lettuce leaves
- 4 Tbsp organic coconut flakes
- sliced cherry tomatoes
Peel apples, cut into ½-inch chunks. Immediately place in large bowl and toss with lemon juice. Stir in celery, walnuts, cilantro, and mayonnaise. Place lettuce leaves on plates and divide salad among the plates. Garnish with coconut and sliced cherry tomatoes.
