A tasty breakfast recipe!
- 2 cans coconut milk
- 2 Tbsp tapioca starch
- 4 probiotic capsules- OR 4 Tbsp of store-bought coconut yogurt
- 2 Tbsp organic stevia
Scoop about ⅓ cup of coconut milk and mix with the tapioca starch until smooth. Pour coconut milk into a large saucepan and whisk until smooth, then add in the tapioca/coconut milk mixture to this pot. Place pot on stove at medium heat until the coconut milk starts to simmer. Turn the heat down to low and continue stirring until the mixture has thickened, about 5-10 minutes. Allow the coconut milk to cool until it is just warm. Break open the probiotic capsules and sprinkle in. OR add the store bought coconut yogurt now. Mix in the stevia. Pour the coconut milk into glass jars with lids, and store in the fridge for about 24 hours. Then top with your choice of toppings and enjoy!
